Taiwanese Fried Chicken
INGREDIENTS
- 1 small cube fermented bean curd
 - 1 tbsp oyster sauce
 - 1 tsp shaoxing wine
 - 1/4 tsp white pepper
 - 3 cloves garlic, chopped
 - 1 lb boneless skinless chicken thighs, cut into 1” cubes
 - frying oil
 - 3/4 cup sweet potato flour
 - Handful thai basil
 - 1 tsp salt
 - 1/2 tsp sichuan peppercorn, toasted and grind
 - 1/2 tsp white pepper
 - 1/4 tsp paprika or cayenne
