Cannoli Shells

  • 5 cups ricotta cheese store-bought or homemade
  • 2 to 2 1/2 cups powdered sugar (8.8 oz, 250 grams to 11 oz, 312 grams)
  • 1 vanilla bean split and seeds scraped
  • 2 tsp vanilla extract
